Seeking a Fermentation Specialist for an opportunity in Chicago, IL with a groundbreaking biotech company born out of NASA-supported research on extremophiles in geothermal pools. Their novel fermentation technology produces a sustainable source of complete protein using only a fraction of the resources required by traditional agriculture. This position will be responsible for daily operations of the fermentation and media preparation equipment under food safety compliance and safety standards. Essential Duties and Responsibilities:
- Grow biomass in trays via a fermentation method and assist in downstream processing
- Work with the microbiology team to transfer and validate working lots
- Operate both fermenters and pressure vessels, taking samples to verify sterility and quality of media
- Oversee the operation of plant equipment, ensuring quality, timeliness, and accuracy via analytical testing
- Ensure established GMPs, SOPs, and batch record instructions are followed
- Work with Scientists/Engineers to set up and run experiments on new or existing product lines
- Ensure that all general cleaning & housekeeping are completed on a daily basis
- Work in conjunction with maintenance to ensure all equipment is serviced and maintained in accordance with relevant SOPs and manufacturers' guidance
- Notify management/quality in a timely manner of any potential deviations/process changes, as well as any process improvements identified by operations
- Provide general support to the Product Development team as assigned
- Assist other personnel as needed, and will perform other duties essential to the department as requested by management

Position Qualifications:
- Degree in Microbiology, Biochemistry, Chemistry, or Chemical Engineering preferred
- 3 – 5 years of plant operations experience preferred
- Background in aseptic technique and fermentation preferred
- Proven mechanical aptitude and troubleshooting
- Able to understand, implement, and offer instruction on Good Manufacturing Practices (GMP), Standardized Sanitary Operating Procedures (SSOP), and Hazard Analysis Critical Control Points (HACCP)
- Exhibits sound and accurate judgment including appropriate people in the decision-making process
- Identifies and resolves problems in a timely manner, works well in group problem-solving situations
- Excellent oral and written communication skills
- Must have the ability to lift over 50 lbs. during a scheduled work shift
- Must have flexibility in work schedule, including overtime and/or weekends as the fermentation schedule requires
